Pizza, a tasty business

A few days have passed since World Pizza Day, and Sole24 Ore has dedicated a long article to the tastiest of our excellences, highlighting the success of pizza around the world.

The pizza industry is going through an extraordinary growth phase, with a global market value exceeding $151 billion according to ITA0039 data. This success is particularly reflected in the Italian scene, where pizzerias are undergoing a true metamorphosis, elevating themselves from simple informal establishments to temples of quality gastronomy.

The revolution in the pizza world is evident in the innovative approach of modern pizza makers, who are experimenting with alternative doughs, selected flours, and creative ingredient combinations. This evolution has led the industry to expand beyond national borders, with chains and master pizza makers opening locations around the world, defying traditional conventions.

The economic outlook is particularly promising, with projected annual growth of 5 percent through 2031. The Italian market, in particular, shows impressive numbers: Coldiretti estimates a turnover of 15 billion euros, with an annual production of 2.7 billion pizzas and more than 100,000 full-time employees.

Italy firmly maintains its role as the home of pizza, on the strength of UNESCO recognition for the Art of Neapolitan Pizzaiuolo. Innovation in the industry continues, as highlighted by the Socioeconomic Observatory of Neapolitan Pizza, a valuable tool for pizza entrepreneurs.

The pizza phenomenon is further amplified by the delivery boom. The United States leads global consumption with 13 kilograms per capita annually, while in Italy delivery platforms such as Just Eat are reaching significant volumes, exceeding 5 million kilograms delivered.

On social media, pizza dominates unchallenged with over 3.6 million monthly searches and 75 million hashtags on Instagram. Pizza Fritta emerges as the most popular variety online, followed by the great classics such as Margherita and Calzone, demonstrating how this dish continues to evolve while keeping its traditional appeal intact.

The demand for quality and creativity from an increasingly informed and demanding clientele pushes the most advanced pizza makers to also choose cooking methods that are sustainable, technologically performing and able to guarantee that relationship between research, innovation and technology that respects the organoleptic qualities of our national passion.
